ROAST BEEF IN A POT served with spaghetti ( Recipe included.)

You may serve this dish with vegetables of your desire, potatoes fried or baked. A typical Greek dish is served with spaghetti, topped with grated Zakynthian local cheeese.
Ingredients:
1 1/2kg (3lb) Sirlon or top side or blade steak in one piece.
125g (4oz) butter
salt and pepper
1/2 cup red wine
Water.
Tie the meat firmly to help retain its shape during cooking.
Heat butter in a heavey saucepan.
Add meat and brown on all sides over a medium heat.
Reduce heat to minimum, cover pan and cook, turning meat from time to time, adding a little hot water at intervals and basting regularly.
When meat is cooked, remove from saucepan and cool slightly. Cut into slices.
Reheat remaining sauce, adding a litlle hot water if necessary and pour over sliced meat. Serves 6.
Note for best results, always cook Rosto Katsarolas over the lowest heat possible and with minimum amount of liquid.

Before serving, put the spaghetti in a saucepan of boiling salted water and cook according to the package instructions. Drain the spaghetti in a colander and put a little butter or olive oil in the pot. Add the drained spaghetti and mix well.

To serve, remove the meat from the pan, remove the string and cut into slices with a serrated knife. Serve on a platter, with the spaghetti and slices of meat drizzled with sauce (put the excess sauce in a saucepan). Traditionally the food is accompanied by grated dry mizithra.
