1 kg flour for all purposes
½ kg flour self-rising
lukewarm water (as needed)
1 to 2 teaspoons salt
1 sachet of baking powder
1 ½ cup of zakynthian black currants
1 sachet 50 g. anise
1 teaspoon cinnamon powder
1 teaspoon of clove powder
orange zest
juice of 1 lemon (or orange)
1 cup sugar or molasses (Petimezi) or honey (the amount depending on the desired sweetness)

Now how to make them…..
In a deep bowl, add all the flour. Add lukewarm water to the dough to become slurry and falls from the spoon. If you add the orange juice pour less water. Add salt and baking powder and mix again.
Add all the remaining ingredients and mix everything together until the batter is uniformed and smooth.
In a deep pan pour Zakynthian Olive oil, that’s the secret folks and wait till it burns slightly.. we then take a tablespoon of dough and place it in the oil to fry.
You do not want a very hot fire because your tiganites may burn very quickly, so just test with a few and adjust accordingly. Turn the tiganites over until both sides become a dark honey color.
We continue in the same manner until all the dough is finished. Then spread on a platter and sprinkle with petimezi until it covers all (honey can replace tge Petimezi or suguar can be used with a sprinkle of cinnamon).
